Primarily obtained from cultivar Bosana olives collected at the time of early ripening. The result is a green fruity extra virgin olive with a firm flavour and the
strong reference of artichoke and thistle. The taste is recognized for its intense tones and is balanced by a bitter and spicy flavour.
