Made with an ancient grain, busiate originate from the province of Trapani, located in western Sicily. They take their name from busa, the Sicilian word for the stem of ampelodes mosmauritanicus, a local grass. Their rugged texture will cling to any pasta sauce, for an extra flavorful dish.
